Ingredients

  • topping:
  • 1 refrigerated pie shell
  • 1 c flour
  • 1/3 c sugar
  • 1/3 c brown sugar
  • 1.5 teas cinnamon
  • pinch salt
  • 1/2 cup cold unsalted butter, diced
  • filling:
  • 1.25 lbs granny smith (3-4 med apples)
  • 1.25 lbs macintosh apples (3-4)
  • 1/2 c sugar
  • 2 T flour
  • 1/4 t salt
  • 1 t cinnamon
  • 1/4 t ground nutmeg

Preparation

Step 1

Preheat oven to 400. set oven rack to center position. prick pie shell all over with a fork and line with parchment paper, weigh down with pie weights or uncooked rice. bake 10 minutes. remove weights and paper and bake 5 minutes until golden brown. transfer to rack to cool. lower oven temp to 375.

For topping: in food processor, blend flour, white and brown sugar, cinnamon and salt. add diced butter, pulse until mixture resembles wet sand.

For filling: peel, core and cute apples into slices. In large bowl, toss apples with 1/2 c sugar, 2 t flour, salt, cinnamon and nutmeg. pour into cooled shell, mounding apples in center. sprinkle topping over apples, mounding if needed.

place pie on baking sheet and bake for 40 minutes. reduce oven temp to 350. cover topping with foil to prevent overbrowning. bake 30-40 minutes longer, until juices bubble and topping is crisp and golden. transfer to rack to cool
