  • Milk (just under one cup)
  • 1 Tablespoon white vinegar or lemon juice

1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.

2. Add enough milk to bring the liquid up to the one-cup line.

3. Let stand for five minute. Then, use as much as your recipe calls for.

Lemon Juice DOES work.My mom makes buttermilk pancakes from scratch every weekend, and she always uses the milk and lemon trick. It's always worked. She uses lemon juice from a bottle, so maybe fresh lemon doesn't work.

Buttermilk? NOT!!! This recipe is making SOUR MILK not buttermilk! Real buttermilk has many benefits in baking and cooking. Sour milk just doesn't cut it.

I had never seen buttermilk powder in my area and got the bright idea after seeing it on a web-site that I would order a bag, paid $5.90 +postage for it.
I love to use buttermilk in breads and muffins, but thought this would save me having to keep buttermilk on hand and taking a chance of not using all of it.
I tried this recipe and it taste so much better than the powder buttermilk mix and one normally always has white vinegar and milk on hand. I loved it and it's more economical to make. This is a keeper.

This is just a substitute. Unfortunately, if it's the texture you need when using real buttermilk, you will be saddened. I looked this up when in the middle of making pancakes I realized my buttermilk was bad...my recipe makes almost marshmallow fluff texture whipped up beautiful batter. Using the substitute it was nothing like it usually is. Flabby, slightly rubbery texture... The taste was fabulous, though, so you could definitely use this for some recipes.
