Ingredients
- 1 cup red wine vinegar
- 1 1/2 cup extra virgin olive oil
- 4 cloves garlic - mashed
- 3 tablespoons dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 packages frozen cheese tortellini - 16 ounces
- 24 leave fresh basil - chopped finely
- 1/2 cup chopped parsley
- 12 scallions - sliced
- 1 1/2 cup grated parmesan cheese

Preparation
Step 1
Cook tortellini in boiling salted water, until tender but still firm.
Drain immediately, rinse until cool in cold water and drain again.
Chop parsley and basil in food processor, add garlic, then add in vinegar, olive oil, mustard, salt, pepper, and mix well.
Mixed the cooked tortellini and scallions, with dressing in a large bowl.
Fold in most of the parmesan cheese.
If you have time, refrigerate the salad for a few hours before serving.
Stir and top with remaining parmesan cheese.
