Ingredients
- 1/2 c butter
- 1 c boiling water
- 1 c flour
- 1/4 t salt
- 4 eggs
- Cream-Puff Custard Filling
- 3/4 c sugar
- 3 T cornstarch
- 3 T flour
- 3/4 t salt
- 3 c milk
- 2 egg yolks, slightly beaten
- 1 c heavy cream, whipped
- 2 t vanilla

Preparation
Step 1
Start oven at 425 deg. Grease cookie sheets. Melt butter in boiling water. Add flour & salt all at once. Stir vigorously. Cook, stirring constantly, until mix forms ball that doesn't separate. Remove from heat & let cool slightly. Add eggs one at a time, beat vigorously after each addition until mix is smooth. Drop dough from teaspoons onto pan. Bake 10 mins., then lower to 325 deg for 10 mins. Cut tops off, return to oven - 10 mins.
Filling:
Combine sugar, cornstarch, flour & salt in saucepan. Stir in milk gradually Bring to a boil, stirring constantly. Cook & stir until thickened. Remove from heat, stir a little hot mix into egg yolks, then add to saucepan. Return to heat and bring to boil, stirring constantly. Remove and let cool. Beat well with rotary beater. Stir in vanilla. Fold in whipped cream. Fill puffs.
