Ingredients
- 4 chicken cutlets
- salt and pepper
- 1 string cheese - halved lengthwise
- flour
- beaten egg
- panko crumbs
- oil for baking sheet

Preparation
Step 1
Place 2 chicken cutlets on a sheet of plastic wrap slightly overlapping to make a rectangle.
Pound the edges together with a meat mallet. Season with salt & pepper.
Place 1 piece of string cheese along edge of the chicken.
Using the plastic wrap lift the chicken up and over the cheese and roll it into a tight log, tuck in the ends.
Dredge in flour, dip in egg then roll in panko. Repeat with 2 other cutlets and remaining cheese.
Chill for 30 minutes.
Bake on oiled baking sheet at 450 until chicken is cooked through. About 20 minutes.
