Ingredients
- 1 1/2 # Roma tomatoes, diced ( gasp, these were shipped in)
- 1/2 red onion, finely diced
- 1 jalapeno, minced ( save the seeds to add later if you want more heat)
- 1 serrano chili pepper, seeded and minced
- Small handful cilantro, chopped (from Nunez farm at my market)
- 1 bunch scallions, thinly sliced ( also from Nunez)
- Juice of one lime
- Optional dried oregano and ground cumin to taste
- Salt and freshly ground pepper to taste

DISCLAIMER — I know tomatoes aren’t in season but, as I had the great privilege to work with about 20 fifth graders from St. Leo’s School in Oakland and to do a cooking demo for them at our hospital’s farmers market, I wanted to show them something they could make at home soon. In fact almost all of them promised they would go to my web site to make this salsa. READ THIS, KIDS — while the salsa will be really good now it will taste MUCH, MUCH better when tomatoes are in season in Oakland — later this summer.
, organized a visit to the school. We talked to the students about food and exercise. Many of them professed to help their moms and dads with all it takes to put meals on the table. But only a few are actually prepping fruits and vegetables yet. They certainly got a chance at school. They used their plastic “lettuce knives” (they cut vegetables and not skin) and sliced many kinds of fresh fruit and veggies for snacks and to use to make sandwiches for lunch.

Mix everything together and use it on fish, chicken, on tacos, with tortilla chips, or huevos rancheros. Summer is almost here and it will be even better.
Her books are all available on Amazon. I would guess a toaster oven would be a handy addition to a studio kitchen. I know New Yorkers who have done amazing things in small kitchens. Dr. M
May add 1/2 clove of garlic, finely chopped
After looking at the salt content of store bought salsa I thought I would have to remove this from my diet. I thought all the salt would be in the chips, I found unsalted chips, then I looked at the label of the salsa. This recipe will help me keep one of my favorite snacks in my diet and make it a healthy option. Thank you.
