Slow Cooker Chicken Cordon Bleu

Ingredients
- Sauce:
- 4-6 boneless, skinless chicken breasts
- 4-6 slices Swiss or Provolone cheese
- 4-6 thin slices smoked ham
- 1/4 to 1/2 cup flour
- 1 cup milk
- 1 cup whipping cream
- 1 cup chicken broth
- 1 1/2 cups cheddar, Swiss or colby cheese, grated
- 1/2 cup grated Parmesan cheese
- 2 T butter
- 2 T flour
- 1/2 t onion powder or sauteed onions
- 1/2 t pepper
- 1 t salt
- 1/4 to 1/2 t red pepper flakes (optional)
- 2 t sugar

Step 1
Place chicken breasts between sheets of plastic wrap. Using a mallet, pound each chicken breast to 1/4" thickness. Season each piece of chicken with salt and pepper.
Place 1 cheese slice and 1 ham slice on each breast. Roll up each breast and secure with toothpick.
Dredge each in flour and shake off excess.
In a skillet, add a few tablespoons of oil and turn heat to med/high. Brown both sides of chicken pieces until nice and golden brown.
Sauce:
Over medium heat, melt butter and add salt, pepper, pepper flakes, onion powder and sugar. Whisk together. Add the flour and stir quickly until the roux is bubbly and smooth. Add the broth, cream and milk and continue whisking over med heat until thickened, about 10 minutes. Turn heat to low.
Add the grated cheeses, stir well, till nice and smooth. Add a bit of milk or chicken broth if too thick.
Pour the sauce over the browned chicken pieces in slow cooker and cover. Cook on low 5-6 hours or high 3-4 hours. Stir sauce occasionally so as not to burn around the edges.
