Ingredients

  • 1 1/4 c sugar
  • 6 T oil
  • 2 eggs
  • 3 c flour
  • 1 1/4 t baking soda
  • 1/4 t salt
  • 1 1/2 c buttermilk
  • 2 t vanilla
  • 1/2 c coconut
  • 1 1/2 t almond flavoring
  • 1/3 c cocoa
  • 3/4 c conf. sugar
  • 1 T milk

Step 1

Preheat oven to 350 deg. Combine sugar and oil, beat well. Add eggs, one at a time. Combine flour, baking soda and salt; add to sugar mixture alternating with buttermilk. Stir in vanilla. Combine 1 c batter, coconut and 1 t almond; stir well. Set aside. Add cocoa to remaining batter in large bowl. Reserve 1 c cocoa batter. Pour remaining cocoa batter in pan. Top with reserved cocoa batter, spreading evenly to cover. Bake at 350 deg. for 40 mins. Cool in pan 10 mins.; remove and cool on wire rack. Combine remaining 1/2 t almond with conf. sugar and milk. Drizzle over cake. Decorate with coconut and sprinkle with cocoa.
