Ingredients

  • 6 skinless bonelss chicken thighs cut into 3 pieces each
  • 2 tblsp ground cumin
  • 1 tblsp olive oil
  • 1 large onion, thinly sliced
  • 2 14 1/2oz cans chunky tomatoes in juice
  • 1 cup canned chicken broth
  • 2 tblsp minced can chipotle plus 1 tblsp adobo sauce
  • 1 oz unsweetened chocolate, chopped

Step 1

Coat chicken on all sides with cumin. Sprinkle with salt and pepper. ehat oil in large pot over medium heat. Add chicken; saute until browned on all sides, about 5 minutes. Add onion and saute until beginning to brown, about 3 minutes. Add tomatoes with juice, broth, chipotle chilies, adobo sauce and chocolate and bring to simmer. Reduce heat to medium low and simmer until chicken is cooked through and sauce thicken slightly about 20 minutes.
