Ingredients
- 6 cups unripe mango (about 3-4 large, hard mangoes)
- 1 1/2 cups diced red pepper
- 1/2 cup finely chopped yellow onion
- 1/2 tsp crushed red pepper flakes
- 2 tsp finely chopped garlic
- 2 tsp finely chopped ginger
- 1 cuplight brown sugar
- 1 1/4 cup cider vinegar (5 pr cent)
- 1/2 cup water

Preparation
Step 1
Handling mangoes may irritate skin. Wear plastic gloves. Wash all produce well. Peel and chop mango into 1/2 inch cubes. Dice red pepper into 1/2 inch pieces. Finely chop yellow onions.
Wash and rinse canning jars; keep hot until ready to use. Prepare lids according to manufacturer's directions.
Hot pack according to canner instructions.
