Ingredients

  • 1 1/2 lbs ground chuck
  • 1 (3.5oz) pkg hot and spicy crispy breadcrubs
  • 1/2 onion, minced
  • 1/2 red bell pepper, minced
  • 2 jalapenos, seeded and minced
  • 2 large eggs, lightly beaten
  • 1 (15oz) can tomato sauce
  • 1 (14.5oz) hot rotel
  • 2 tblsp tomato paste
  • 2 teas ground cumin
  • 1 teas salt
  • 1/2 teas ground black pepper
  • 8 buttered and toasted sub rolls
  • Toppings: shredded cheese, sour cream, finely chopped onions, shredded lettuce, guacamole, chopped cilantro

Preparation

Step 1

1. Preheat oven to 350.

2. In a medium bowl, combine first 6 ingredients. Divide mixture into 32 equal portions. Press mixture firmly into balls.

3. Place meatballs on a lightly greased rack in a broiler pan. Bake 20 minutes.

4. In a large skillet, combine tomato sauce and next 5 ingredients. Cook voer medium ehat 10 minutes. Add meaballs; reduce heat and simmer 15 minutes.

5. Spoon 4 meatballs into each toasted sub roll. Serve with desired toppings.
