Bow-Ties with Bacon and Tomatoes 1 Picture

Ingredients

  • 4 slices bacon, cut into 1-inch pieces
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 can (14.5 oz) diced tomatoes with roasted garlic and onion, undrained
  • 1 3/4 cups Progresso® chicken broth (from 32-oz carton)
  • 3 cups uncooked bow-tie (farfalle) pasta (6 oz)
  • 1/8 teaspoon pepper

Preparation

Step 1

1. In 12-inch skillet, cook bacon over medium-high heat 8 to 10 minutes, stirring frequently, until bacon is brown. Reduce heat to medium. Add onion; cook 2 to 3 minutes, stirring frequently, until onion is tender.
2. Stir in tomatoes, broth, uncooked pasta and pepper. Heat to boiling over high heat. Reduce heat to medium; cook uncovered (I say covered) 10 to 12 minutes, stirring occasionally, until pasta is tender and mixture is as thick as you like.
High Altitude (3500-6500 ft): In step 2, cook uncovered 12 to 14 minutes.
