Roasted Garlic & Onion Dip

Ingredients
- 1 medium onion
- 3 whole heads garlic (about 48 cloves), unpeeled
- 1/4 tsp (1 mL) salt
- 1 tbsp (15 mL) olive oil
- 1 cup (250 mL) sour cream
- 1/2 cup (125 mL) mayonnaise
- 1/2 tsp (2 mL) Worcestershire sauce
- 1/2 tsp (2 mL) ground black pepper
- 3 slices bacon, cooked, drained and crumbled
- 1 tbsp (15 mL) chopped fresh chives (optional)

Preparation

Preheat oven to 350°F (180°C). Coarsely chop onion. Slice about 1/4 in. (6 mm) off the pointed top of garlic heads. Place onion and garlic, cut-side up, in
Cover cocotte and bake 50-60 minutes or until garlic is deep golden brown. Remove from oven and let stand 10-15 minutes or until cool enough to handle. Gently squeeze cooled garlic from heads into a medium mixing bowl (discard skins); mash garlic.
Mix onion, sour cream, mayonnaise, Worcestershire sauce and pepper into mashed garlic. Spoon dip back into clean
. Cover and refrigerate 1-2 hours to allow flavors to blend. Stir bacon into dip just before serving and garnish with chives, if desired.
