  • 1/2 c. butter
  • 1 c. boiling water
  • 1 c. sifted all purpose flour
  • 1/4 t. salt
  • 4 eggs

Preparation

Step 1

Melt butter in boiling water. Add flour and salt all at once.; stir vigorously. Cook, stirring constantly, till mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add eggs, one at a time, beating vigorously after each until smooth.
Drop dough by heaping tablespoons 3" apart on greased baking sheet.
Bake at 450 degrees for 15 min. Reduce heat to 325 degrees and bake for an additional 25 min. Turn oven off and allow cream puffs to dry inside oven for about 20 min. Cool on rack.
