Apple Clove Butter

Ingredients

• 4 lbs apple mcintosh
• 1 cup apple cider
• 1/4 cup orange juice
• 1 cinnamon stick broken in half
• 3/4 cup brown sugar
• 1/2 teas ground cloves
• 2 teas grated orange peel

Preparation

Step 1

Combine apples, cider, orange juice and cinnamon stick in heavy large saucepan. Bring to boil. Reduce heat to medium low. Covera nd simmer until apples are very tender, stirring occasionally, about 10 minutes. Discard cinnamon stick. Puree apple mixture in processor. Return to same saucepan. Stir in brown sugar, orange peel and cloves. Simmer over medium low heat unti lmixture is dark in color and thick, and mounds on spoon, stirring frequently, about 45 minutes. Transfer to large bowl. Cool completely.
