Ingredients
- 8 ounces uncooked whole grain Penne pasta
- 1 tablespoon olive oil
- 1 pound boneless skinless turkey breast cutlets, cut into 1/2-inch pieces
- 1 small green bell pepper, seeded, deribbed and julienned
- 1/2 cup chopped onion
- 1 clove garlic, pressed
- 1 cup sliced fresh mushrooms
- 1 cup halved cherry OR grape tomatoes
- 1 (8-oz.) jar pizza sauce
- 1/2 teaspoon Italian seasoning
- 1/3 cup shredded part-skim Mozzarella cheese

Preparation
Step 1
Cook pasta according to package directions; drain. Heat the oil in a large skillet over medium-high heat; saute turkey, bell pepper, onion and garlic until turkey is no longer pink. Add pasta, mushrooms, tomatoes, pizza sauce and Italian seasoning; heat through. Remove from heat and sprinkle with cheese; let stand until melted.
SERVING SUGGESTION: A big spinach salad tossed with Easy Balsamic Vinaigrette (see recipe).
