Ingredients
- 1/4 cup water
- 3 tablespoons hoisin sauce
- 2 tablespoons peach preserves
- 1 tablespoon sugar
- 2 teaspoons low sodium soy sauce
- 2 large oranges
- 3 tablespoons chopped cilantro
- 4 (4-oz.) boneless skinless chicken breast halves
- Water/oil mixture

Preparation
Step 1
In a small bowl, combine first 5 ingredients (water through soy sauce). Finely grate 1 teaspoon of peel from one of the oranges; stir into soy sauce mixture. Peel and section oranges, removing seeds; place in a small bowl; add cilantro and toss gently; set aside. Heat water/oil mixture in a large skillet with a tight-fitting lid over medium heat; add chicken and cook for 3 to 5 minutes or until browned, turning once. Pour sauce mixture over chicken and bring to a boil. Reduce heat, cover and simmer for 8 to 10 minutes or until chicken is cooked through; remove chicken from skillet and set aside. Simmer skillet sauce for 5 minutes or until reduced to 1/3 cup. Return chicken to skillet, heat through and turn to coat with sauce. Serve chicken with orange mixture.
SERVING SUGGESTION: Brown rice and steamed broccoli.
GLUTEN FREE: Make sure hoisin sauce, peach preserves and soy sauce are gluten free.
