Ingredients

  • 1/2 small onion, thinly sliced
  • 1/4 cup red wine vinegar
  • 2 lbs. fresh spinach, torn
  • 4 hard-cooked eggs, chopped
  • 1 (5 oz.) can water chestnuts, drained and sliced
  • 1/2 lb. fresh mushrooms, sliced
  • 6 slices cooked, crumbled bacon or 1/2 cup imitation bacon
  • 2/3 cup salad oil or olive oil
  • Salt to taste

Step 1

Soak onion slices in vinegar 20-30 minutes; drain, reserving vinegar. Combine onion, spinach, eggs, water chestnuts, mushrooms, and bacon; toss lightly. Combine reserved vinegar and salad oil; pour over spinach and toss again. Season with salt.

Yield: 6-8 servings.
