  • 1 1/2 cups flour
  • 1 tea. baking powder
  • 1 tea/ chili powder
  • 1 tea/ salt
  • 1/4 tea. baking soda
  • 6 Tbsp. butter, chilled and cut into small pieces
  • 4 oz. shredded Pepper Jack Cheese (about 1 cup)
  • 1/2 cup butter milk
  • 1 tea. butter, melted

Step 1

Preheat oven to 425 degrees

In a medium bowl, whisk together the flour, baking powder, chili powder, salt and baking soda. Using a pastry blender or two forks, cut the chilled butter into the flour mixture until it resembles coarse crumbs.

With a wooden spoon, stir in the cheese until well-distributed. Pour in the butter milk and stir until just moistened. Quickly knead the dough in the bowl four to six times until the dough comes together and is fairly smooth.

On a lightly floured surface, pat or roll out the dough to a 1/2" thickness. Cut out 7 biscuits with a floured 2 1/2" round biscuit cutter. Re-roll the scraps and cut out 1 more biscuit. Place the biscuits on an ungreased baking sheet. brush the tops with the melted butter.

Bake the biscuits until puffed and golden, 12-15 minutes. Remove from the baking sheet and serve hot, warm, or room temperature.
