Ingredients
- Pie Filling:
- Mix together:
- 1/2 C cold water
- 5 T cornstarch
- Combine and bring to boil, then add to above mixture.
- 1 1/2 C hot water and 1 1/4 C sugar
- Cook until thick
- Add and cook a few minutes:
- 3 egg yolks, beaten
- Add:
- juice and rind of 1 lemon and 1 T butter. Cool.
- Meringue:
- 3 egg whites
- 1/4 C sugar

Step 1
Pour pie filling into cooked pie crust.
Beat egg white and sugar til mixture stands in peaks. Pour onto pie filling and place into 425 degree oven until browned.
