Ingredients

  • 12 plum tomatoes, halved lengthwise, cores & seeds removed
  • 4 tbs good olive oil
  • 1 1/2 tbs balsamic vinegar
  • 2 large cloves of garlic, minced
  • 2 tsp sugar
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Step 1

Preheat oven to 450 degrees.

Arrange tomatoes on a sheet pan, cut side up, in a single layer. Drizzled with olive oil and balsamic vinegar. Sprinkle with salt, pepper, garlic and sugar. Roast for 25 to 30 minutes, until the tomatoes begin to caramelize. Serve warm or at room temperature.

Serve with crusty bread and cheese.
