Chicken with Lemon-Wine Sauce

Ingredients

  • 1 1/4 lb boneless chicken breast
  • salt & pepper
  • 1/2 flour
  • 2 T butter
  • 1/2 c white wine or chicken broth
  • 2 T lemon juice
  • chopped fresh parsley
  • 1 t drained capers or lemon slices

Preparation

Step 1

Pound chicken thin; season. Coat with flour. In skillet, melt 2 t butter and cook chicken until lightly browned. Remove and keep warm. Mix wine and lemon juice together; add to pan drippings. Cook and stir until slightly thickened. Pour over chicken. Sprinkle with parlsey. Garnish with lemon slices.
