Chicken Tortilla Soup

Ingredients
- 4 T canola oil
- 1 chopped onion
- 3 cloves garlic, minced
- 3 c chopped cooked chicken
- 1 1/2 t lime zest
- 1 t cumin
- 1/2 t ancho chile pepper
- 2 cans chicken broth
- 1 can (14 1/2 oz.) diced tomatoes w/juice
- 1 can chopped chiles
- 1/3 c Fresh cilantro
- 2 T Lime juice
- 4 corn tortillas cut into 1/2" wide strips
- 1 c shredded cheddar cheese

Preparation
Step 1
Heat 2 T oil over med heat. Add onion and garlic; cook until softened. Add next 4 ingredients; cook 2 mins. Add broth, tomatoes w/juice, 1 c water, chiles, cilantro and lime juice. Boil, reduce, simmer 15 mins. Fry tortillas in remaining oil; drain, sprinkle over soup; serve with cheese.
