Ingredients

  • 1/2 pound Bow Tie pasta
  • 1 tablespoon sesame seeds
  • 1/4 cup rice vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon finely chopped fresh gingerroot
  • 1 tablespoon sesame oil
  • 1 1/2 teaspoon low sodium soy sauce
  • 1 1/2 teaspoons sugar
  • 1 pound cooked boneless skinless chicken breast meat
  • 1 medium red bell pepper, seeded, deribbed and thinly sliced
  • 2 medium stalks celery, sliced
  • 4 scallions, thinly sliced
  • Salt and pepper, to taste

Preparation

Step 1

Cook pasta according to package directions; drain and rinse under cold water until cool; drain well. While the pasta cooks, stir sesame seeds in a small dry skillet over medium heat until toasted, about one minute; transfer to a large bowl and whisk in vinegar, mustard, gingerroot, sesame oil, soy sauce and sugar. Thinly slice the chicken and add to the bowl along with the cooked and drained pasta, red bell pepper, celery and scallions. Season to taste and serve.

SERVING SUGGESTION: Serve sliced cucumber on the side.
GLUTEN FREE: Make sure pasta, red wine vinegar, Dijon mustard and soy sauce are gluten free.
