Ingredients

  • 1 c butter
  • 2/3 c brown sugar
  • vanilla
  • 1 beaten egg
  • 2 1/4 c flour
  • 1/4 c cocoa
  • 3/4 c finely chopped pistachios
  • 3/4 c semisweet chocolate
  • 1 tbsp shortening
  • 1/2 c ground pistachio nuts

Preparation

Step 1

In medium saucepan combined butter and brown sugar. Heat and stir over low heat until butter is melted. Remove from heat and stir in vanilla. Cool mixture for 15min. Stir in beaten egg, flour and cocoa until combined. Stir in 3/4c pistachio nuts. Divide dough in half. Cover and chill about 30 min.

On a lightly floured surface roll half dough at a time to 1/4inch thickness. Using heart shaped cookie cutter, cut out cookies. Place cookies 1 inch apart on ungreased baking sheet.

Bake 350F for 9 min or until edges are firm. Transfer cookies to wire rack and let cool.

In small saucepan heat and stir chocolate pieces and shortening over low heat until melted. Remove from heat. Dip half of each cookie into chocolate mixture; roll edges of cookie in ground pistachio nuts.
