Ingredients

  • 1/4 c. butter
  • 3 c. onion, finely chopped
  • 4 c. vegetable broth
  • 3 c. potatoes, peeled and cubed
  • 4-5 cloves garlic, minced
  • 1 1/8 tsp. pepper
  • 1/4 tsp. celery seed
  • 1 Tb. sugar
  • 2 12-oz. cans corn
  • 4 c. milk

Preparation

Step 1

Melt butter in a 4-qt. saucepan over medium heat. Add onion, cook until translucent. Stir in broth, potatoes, garlic, pepper, celery seed, sugar and corn. Bring to a boil. Reduce heat and simmer, covered, 30 minutes. Stir in milk. Heat to desired temperature, but do NOT boil. Serves 6.
