This semi-famous cake was formulated by Frank Friesen when he was the baker at the Boulder Sanitarium and Hospital, Boulder, Colorado in about 1955. It has been imitated and sold by the "millions" from Loma Linda Market.

Ingredients

  • 3 eggs
  • 1 cup salad oil
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1 cup buttermilk
  • 1 cup prunes, cooked and chopped
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup cocoa
  • 1/2 tsp baking soda
  • 1 tsp baking powder

Preparation

Step 1

Cream shortening and sugar. Add vanilla and eggs and beat well. Sift together flour, salt, soda, nutmeg, allspice and cinnamon, cocoa and baking powder. Add alternately, flour and buttermilk. Add prunes. Bake at 350 degrees for 45 minutes in 2 greased and floured round cake pans. When cooled, ice with the following:

1 1/4 cups powdered sugar
1 1/2 Tbsps cocoa
2 1/2 Tbsps milk
1/4 cup butter
1 tsp vanilla

Mix all ingredients and beat until light.
