Ingredients
- 3 cups flour
- 1 cup granulated sugar
- 4 tsp baking powder
- 1 1/2 tsp salt
- 1 1/2 cups coarsely chopped walnuts, divided
- 1 cup coarsely chopped raisins or dates or soft dried apricots
- 1 egg, beaten
- 1/4 cup soft shortening
- 1 1/2 cups milk
- 1 tsp vanilla

Step 1
Thoroughly combine flour with sugar, baking powder and salt. Stir in 1 1/4 cups walnuts and all of raisins (or dates or apricots).
Combine egg, shortening, milk and vanilla; add to dry ingredients. Mix just until ingredients are blended.
Pour into greased 9-by-5-by-3-inch loaf pan. Sprinkle remaining 1/4 cup walnuts over top. Bake at 350 F for 60 to 70 minutes. Let loaf stand in pan 10 minutes, then turn onto wire rack to cool before packaging or storing.
