  • 1 medium-size fresh ripe pineapple
  • 1/4 cup Cointreau
  • 2 tbsp confectioners' sugar
  • 1 cup fresh strawberries
  • 1 cup seedless green grapes, halved

Preparation

Step 1

With long-bladed, sharp knife, cut pineapple, right through frond, into quarters. With scissors, snip off tips of frond, if desired.

Remove pineapple, in one piece, from shells. Refrigerate shells.

Cut core from pineapple, and discard. Cut pineapple into chunks, and place chunks in large bowl. Add Cointreau and confectioners' sugar; mix gently.

Refrigerate pineapple, covered, 3 hours, or until you are ready to serve.

Meanwhile, wash strawberries, and drain. Reserve few berries for garnish. Hull remaining berries, and slice. Refrigerate all berries until ready to use. Also, refrigerate green grapes.

Just before serving: Toss sliced strawberries and halved green grapes with pineapple chunks. Spoon fruit into chilled pineapple shells. Garnish with reserved whole strawberries.
