Ingredients

  • Dumplings:
  • 4 large bone-in chicken breasts
  • 2 stalks celery with greens
  • 1 large onion
  • salt & pepper
  • poultry seasoning
  • boullion cubes
  • flour
  • 2 potatoes
  • 2 large carrots
  • 2 c flour
  • 4 t baking powder
  • 1 t salt
  • 4 T soft butter
  • 1 c milk

Preparation

Step 1

Fill large stewpot halfway with water. Place chicken, celery & onion in pot. Add salt & pepper, poultry seasoning and 3 boullion cubes. Cook for 2 hours. Remove chicken; strain stock. Dice potatoes and slice carrots thin. Add to pot and cook about 20 mins. Stir 1/2 c flour into water and add to pot to thicken. Remove chicken from bones and add to pot. Mix dumplings and drop into pot. Cook covered for 15 mins.

Dumplings:
Combine flour, baking powder and salt. Cut in softened butter. Stir in milk with wooden spoon until dough is consistent to drop in simmering pot by tablespoonfuls. Cover and simmer for 15 minutes (do not peek). Enjoy!
