Ingredients
- 4 Tbsp. favorite curry powder
- 1/3 cup vegetable oil
- 1 large onion, chopped
- 4 large cloves garlic, minced
- 1 Tbsp. freshly grated ginger root
- 3 pounds boneless skinless chicken- 1 inch chunks
- 15 oz chopped tomatoes
- 1/2 cup chopped fresh cilantro
- 1 tsp. salt
- 2-4 cups water
- 2 medium potatoes, diced
- 2 tsp. garam masala
- 1/4 cup chopped cilatro

Step 1
1. Mix and heat the curry powder in a small dry skillet, stirring and roasting till aromatic, 1-2 mintues. Take care not to burn. Set aside.
2. In a large skillet or kettle, heat the vegetable oil.
3. Add onion, garlic, and ginger root. Cook over low heat for 4 minutes
4. Add all the curry powder, stirring well.
5. Add the chicken chunks. Stir to combine well with curry onion mixture about 3 minutes
6. Add chopped tomatoes, chopped cilantro, salt, and water to cover. Simmer 20 minutes.
7. Add diced potates. Cover and cook till potatoes are tender, 15-25 minutes. Taste for salt and adjust as needed. Do not overcook.
8. to finish, sprinkle with garam masala and 1/4 cup chopped cilantro. Let cool, uncovered. Then cover and hold till time to serve. If making a day ahead, refrigerate. Heat to serve but do not boil.
