  • 1 tsp. olive oil
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • 1 cup uncooked rice
  • 1 cup water
  • 1 can Ro-Tel, undrained
  • 1/2 cup chopped fresh cilantro

Preparation

Step 1

Heat oil in large skillet. Add onion and rice; saute a few minutes and then add garlic. Saute briefly then add remainder of ingredients except the cilantro. Cover and reduce heat, simmer for 20 minutes or until liquid is absorbed. Remove from heat; stir in cilantro.
