Ingredients
- 4 (4-oz.) boneless skinless turkey breast cutlets
- 1/2 cup light Italian salad dressing
- 1/2 cup chopped onion
- 1/4 cup lemon juice
- 1/2 teaspoon cayenne pepper
- 2 cloves garlic, pressed
- 2 teaspoons Cajun seasoning
- 20 ounces frozen chopped spinach

Preparation
Step 1
Place turkey cutlets in a large zipper-topped plastic bag; add remaining ingredients, except spinach. Seal bag and refrigerate for at least 2 hours, turning the bag occasionally. Preheat grill to medium heat. Remove turkey from bag; reserve marinade. Place turkey on grill rack; cover and cook until no longer pink in the center, turning once, about 15 to 18 minutes total. Meanwhile, prepare spinach according to package directions. Pour reserved marinade into a small saucepan and bring to a boil; cook for 1 minute, stirring occasionally. Arrange spinach on a serving platter. Top with turkey cutlets and drizzle with boiled marinade.
SERVING SUGGESTION: Whole wheat couscous and grilled OR steamed asparagus.
