Ingredients

  • 1/4 cup coarsely grated seedless cucumber, squeezed well
  • 3/4 cup Hellmann's Mayonnaise
  • 2 cloves garlic, finely chopped
  • 1 tsp fresh grated lemon zest
  • 1 Tbsp fresh lemon juice
  • Salt and ground pepper to taste
  • Fresh spinach leaves, rinsed and patted dry
  • 8 cherry or grape tomatoes, halved
  • 1 lb rotisserie chicken or turkey, or grilled chicken or turkey breast, sliced
  • 4 whole wheat pita breads,split
  • (My twist--add sliced avacados and sprouts)

Preparation

Step 1

Stir mayonnaise, drained cucumbers, garlic, lemon zest and juice in a small bowl adnd season with salt and pepper to taste. cover and refrigerate at least 30 minutes before serving.

Spread a few Tbsp of dressing inside each pita; add some spinach leaves, tomatoes and meat and drizzle with additonal dressing. (Optional--top with avocados and sprouts)
