Ingredients
- 1/4 cup coarsely grated seedless cucumber, squeezed well
- 3/4 cup Hellmann's Mayonnaise
- 2 cloves garlic, finely chopped
- 1 tsp fresh grated lemon zest
- 1 Tbsp fresh lemon juice
- Salt and ground pepper to taste
- Fresh spinach leaves, rinsed and patted dry
- 8 cherry or grape tomatoes, halved
- 1 lb rotisserie chicken or turkey, or grilled chicken or turkey breast, sliced
- 4 whole wheat pita breads,split
- (My twist--add sliced avacados and sprouts)

Preparation
Step 1
Stir mayonnaise, drained cucumbers, garlic, lemon zest and juice in a small bowl adnd season with salt and pepper to taste. cover and refrigerate at least 30 minutes before serving.
Spread a few Tbsp of dressing inside each pita; add some spinach leaves, tomatoes and meat and drizzle with additonal dressing. (Optional--top with avocados and sprouts)
