  • 1 large butternut squash ( about 5 lb), peeled and cubed
  • 1/4 cup butter, cubed
  • 3 Tbsp. half-and-half
  • 2 Tbsp. honey
  • 2 tea. dried parsley flakes
  • 1/2 tea. salt
  • 1/8 tea. dried thyme
  • 1/8 tea. pepper

Step 1

Place squash in large saucepan and cover with water. bring to a boil. reduce the heat; cover and simmer for 8-10 minutes or until tender. Drain.

Mash squash with the remaining ingredients.

Yield; 10 servings
