Ingredients

  • 6 Tbs. olive oil
  • 3 cloves Garlic, chopped
  • 1 tin white kidney beans, drained
  • 2 Tbs. fresh parsley chopped
  • 8 eggs, slightly beaten
  • salt & pepper to taste

Preparation

Step 1

Heat olive oil over medium heat, add garlic. fry for about 3 min. don't brown.
Add drained Kidney beans, cook until well heated.
Add salt & pepper, parsley and eggs.
Stir from the bottom, when the eggs are slightly firm, place the pain under the broiler, until fully cooked.
Let cool, cut into 1" pieces and serve cold.
