Ingredients
- 2 ribs celery, chopped (about 1 cup)
- 8 radishes, chopped (about 1 cup)
- 1 large (about 1 pound) cucumber, peeled and chopped (about 2 cups)
- 2 hard cooked eggs
- 3 Tbs. extra virgin olive oil
- 2 Tablespoons Miracle Whip
- 1/2 tsp. sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 Tbs lemon juice
- 1 Tbs. white wine vinegar

Step 1
In large bowl, combine celery, radishes and cucumber. Peel hard cooked eggs. Separate egg whites from yolks; chop whites. Stir whites into vegetable mixture in bowl.
In small bowl, mash hard cooked egg yolks until smooth. Whisk in oil, Miracle Whip, sugar, salt and pepper until smooth. Continue to whisk, adding lemon juice and vinegar until well blended. Toss with vegetable mixture.
