Sausages with grapes and saba: This is a great dish, but go easy on the Saba, which can be very sweet and strong.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 pound sweet Italian sausage, each link split lengthwise and opened like a book
- 1 onion, roughly chopped
- 3 cloves garlic, roughly chopped
- 1/2 pound seedless green grapes
- 1/2 pound seedless red grapes
- Salt and pepper, to taste
- Saba, for drizzling

Preparation
Step 1
In a 12 to 14-inch saute pan, heat the oil over high heat until smoking. Add the sausages and brown on one side.
Flip sausages and add the onions and garlic over high heat. Cook 8 minutes, until onions are tender and golden brown. Add the grapes and continue to cook over high heat until the grapes burst. Season with salt and pepper to taste. Drizzle with Saba and serve immediately.
