Grilled Porcini and Arugula Salad

Ingredients

  • 1-2 lb fresh porcini, cut in half
  • 1 bunch arugula, washed
  • 1 lemon, zested and juiced
  • salt and pepper to taste
  • coarse sea salt
  • extra virgin olive oil
  • parmigano reggiano, shaved with a peeler

Preparation

Step 1

Lightly brush porcini halves with oil, place on grill or under broiler, turning frequently, until charred and soft (about 8-10 minutes).

Toss arugula with 1/2 lemon juice, zest, olive oil (1:3 ratio lemon juice:oil), salt and pepper.

Plate arugula salad, with porcini halves around the salad. Place parmigano shavings on top, drizzle with great quaility oil, and sprinkle with sea salt.
