Ingredients

  • 1 pound turkey cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1/4 cup all-purpose flour
  • Cooking spray
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup vodka
  • 1/2 cup reduced-sodium chicken broth
  • 3 tablespoons fresh lemon juice
  • 1 1/2 cups chopped tomato
  • 1/2 cup scallions

Preparation

Step 1

1. Season cutlets lightly with salt and pepper then dust with a little flour on each side.

2. Coat a nonstick pan with cooking spray. Add the oil and heat over medium heat.

3. Saute cutlets approximately 3-4 minutes on each side until cooked through. Transfer the cutlets to a plate.

4. Deglaze pan with vodka away from the heat (scrapping the bottom and sides of the pan). Place the pan back on the heat and cook until nearly evaporated, about 2-3 minutes. Add the broth and lemon juice. Return the cutlets to pan and cook on each side for I minute. Transfer cutlets to a serving plate.

5. Stir tomatoes and scallions into sauce. Heat through.

6. Pour sauce over cutlets and serve.
