This recipe is a little bit different from most. It's one of my very favorites, though I don't make it often. It's "company" cornbread. I'd like to take credit for it, but it came to me from my SIL Beverly. Brown and crusty outside but sooooo moist inside. Hope you like it.

Ingredients

  • 1 C. corn meal mix
  • 8 oz. creamed corn
  • i C. sour cream
  • 2 eggs
  • 1/2 C oil
  • Heat oil in a cast iron skillet. Mix together all other ingredients, add hot oil and mix well. Pour batter in the hot skillet. Bake at 450 degrees till it's really brown and crusty on top.
