Chicken Enchiladas

Ingredients
- 1 onion, chopped
- 1 C cheddar cheese
- 2 cloves garlic, crushed
- 1 C chicken stock
- 1 C tomato puree
- 1 barbequed chicken
- 8 corn tortillas

Preparation
Step 1
Preheat oven to 350 degrees.
Brown onion in oil, add garlic. Cook 1 more minute. Add Stock and
Tomato. Boil. Reduce heat and simmer for 15 minutes. Salt and Pepper.
Shred chicken. Cook tortillas in oil for 1 minute on each side. (They will be warm and soft.) Drain.
Spread ¼ C tomato sauce in bottom of the pan. Roll enchiladas, place in pan. Cover with sauce and cheese. Bake 20 minutes.
Serves: 4
Prep Time: 2 hours (including cooking chicken)
