Ingredients
- 1 can (12 ounces) diet cola beverage
- 1 package (8 ounces) pitted dates, coarsely chopped
- 1 cup packed light brown sugar
- 2 tablespoons vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 egg
- 1 teaspoon vanilla extract

Preparation
Step 1
Preheat the oven to 350 degree. Coat 9x5" loaf pan with nonstick cooking spray.
In medium saucepan, bring cola to boil over medium-high heat. Remove from heat and stir in dates, brown sugar, and oil; mix well then set aside to cool.
In medium bowl, combine flour, baking soda, baking powder, and cinnamon; stir until well combined. Add to cola mixture then stir in egg and vanilla until well combined; spoon into loaf pan.
Bake for 55 to 60 minutes, or until wooden toothpick inserted in center comes out clean. Cool on wire rack for 15 minutes before removing from pan.
