  • 1 cup (2 sticks) unsalted butter at room temperature
  • 1 tsp. freshly grated nutmeg
  • 1/4 cup filtered honey

Step 1

Kitchenaid Mixer....wire whip....use a high quality clover or orange blossom honey, dark honeys will be too strong for this recipe

Add the butter to the mixer bowl. Attach the wire whip to the mixer. Turn the mixer speed to 6 and whip the butter for 1 minute. Stop the mixer and scrape down the sides of the bowl with a spatula. Add the nutmeg and turn the mixer speed to 2 for 30 seconds, then to speed 6. With the mixer running, add the honey and whip for about 1 minute more. The butter can now be put into ramekins or butter molds. Or, with a spatula, turn out the butter on to a piece of plastic wrap. Form the butter into a log and wrap tightly in the plastic. Keep in the refrigerator for up to 1 week, or place in a resealable plastic bag, and freeze for up to 1 month.
