Ingredients

  • Sweetened Whipped Cream:
  • 1/2 cup butter or margarine, softened
  • 3/4 cup confectioners' sugar
  • 1 egg
  • 1/2 cup cocoa
  • 3 ounces semisweet chocolate, melted
  • 2 tbsp creme de menthe liqueur
  • 4 cups (about 14 ounces) chocolate mint-flavored cookies, broken into small pieces
  • 1 cup whipping cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Step 1

In a medium mixing bowl, beat butter, sugar and egg until creamy. Blend in cocoa, chocolate, and liqueur. Stir in cookies. Turn mixture into a plastic wrap-lined 8-inch round pan. Cover and chill until firm (1 to 2 hours). Serve with Sweetened Whipped Cream.

Sweetened Whipped Cream: Beat all ingredients until stiff peaks form.
