Ingredients
- Cake:
- 2 cups of flour
- 2 cups of sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp, salt
- 1 cup cooking oil
- 4 eggs
- 3 cups of shredded carrots
- 1 tsp. vanilla

- Frosting:
- 1 stick of butter or margarine
- 1 8 oz package of cream cheese
- 1 box powdered sugar
- 1 tsp vanilla

Preparation
Step 1
Combine flour, sugar, baking soda, oil, cinnamon and salt. Beat in eggs, one of a time. Beat in carrots and vanilla. Pour into 2 greased cake pans. Bake at 350 for about 30 minutes.
Let cool and then frost with the following. Cover top with crushed pecans or walnuts, decorate with orange carrots with green stems made out of the frosting. Refrigerate cake completely before serving.
