- 2 Tbsp fresh lemon juice
- 1 Tbsp finely grated fresh ginger
- 1 tsp sugar
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 pound sugar snap peas, trimmed and thinly sliced
- 1/2 cucumber, sliced
- 1 shallot, thinly sliced
