Ingredients

  • 1 (5 oz.) package manicotti
  • 8 oz. cream cheese at room temp.
  • 1 cup cottage cheese
  • 1/2 pound (or more) Mozzarella cheese, grated, separated
  • 2 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 1/2 cups meatless spaghetti sauce (we like Classico 4 cheese)
  • 3 oz. Canned mushrooms, if desired

Step 1

Cook manicotti 4 at a time in boiling, salted water, 5-6 minutes or until just done but still firm. Drain.

Blend cream cheese with fork until smooth; mix in cottage cheese. Stir in Mozzarella cheese, eggs, salt and pepper.

Pour half of spaghetti sauce into baking dish (13x9)

Using a knife, fill each manicotti with about ¼ cup cheese mixture; arrange in baking dish.

Pour remaining sauce over all. Top with remaining Mozzarella cheese.

Bake at 350 for 20-25 minutes or until bubbly. Serve with parmesan cheese.
