Sugar Cookies

This is a classic recipe for Christmas cookies. I prefer to make the icing with fresh Lemon Juice, it's amazing.

Ingredients
- 1 large egg, room temperature
- 2 cup all purpose flour, and more for rolling
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- Icing for decorating

Step 1
1. in a large bowl, whisk flour, baking powder and salt together.
2. In mixer, cream together butter and sugar. Beat in egg and vanilla, with mixer on Low. Gradually add flour mixture, beat until combined. Divide dough in half, flatten into discs. Wrap each disc in plastic wrap and freeze until firm, at least 20 minutes. *You can freeze dough in freezer bag for up to 3 months.
3. Preheat oven to 325 degrees. Line baking sheets with parchment. Remove one dough disk, let stand 5-10 minutes. Roll out 1/8 inch thick between two sheets of floured parchment paper, dusting dough with flour as needed. Cut shapes. Using spatula, transfer to prepared baking sheets. If dough gets soft, chill 10 minutes. Re-roll scraps, cut shapes.
4. Bake, rotating halfway through, til edges are golden, 10-18 minutes, depending on size of cookie. Cool completely on wire racks. To ice cookies, spread with back of spoon. Let icing harden, 20 minutes. Decorate as desired.
TIPS:
use flour on utensils to keep dough from sticking. Flour cookie cutters and dust spatula before transferring uncooked dough to sheet. Rolling dough between 2 pieces of floured parchment paper keeps dough from sticking to rolling pin
