Ingredients
- Toppings:
- Good—try to make thicker!
- 4 Lbs New Potatoes, Peeled and cut into 1/4 inch slices
- 1 Small Onion, Chopped
- 28 Oz of Chicken Broth
- 2 Tsp Salt
- 1/2 Tsp Pepper
- 1 Pint Half and Half
- Cheddar Cheese
- Bacon Bits

Step 1
Cooking Time: 5 Hours and 20 minutes
Layer sliced potatoes in a lightly greased 6 quart crock pot. Top with onion. Stir together chicken brother, salt, and pepper and pour over the potatoes and ontion. (Broth will not completely cover potatoes.) Cover and cook on high for 3 to 5 hours or until potatoes are tender. Mash mixture with a potato masher. Stir in half and half. Cover and cook on high for 20 more minutes or until soup is thoroughly heated. Serve with toppings.
